The description “semi dried food products” is used for food products
containing 60% or more water. These products have a percentage of 40% or less
dry substance and they have a high water activity. They can be conserved and
yet have a high aroma and nutrition value.
b. Consumption areas:
Semi dried products can be consumed directly or be used in every area that
its fresh, frozen or dried forms are used. These products are suitable to
be used in salads, sandwiches, all kinds of quiches and other ready meals,
catering, ready product productions, pizza production etc. They can be used
in industrial productions as well as home cooking..
c. Potential industrial usage possibilites and forms of usage:
The most appropriate forms of semi dried products in serial production conditions
and mechanized production lines (such as pizza industry) are cube cuts and
oiled or marinated forms if desired. The sizes are determined to be conforming
the machine park, product formula, visual aesthetics, packaging style of the
buyer and demands and requirements of the ultimate consumer.
Producers enjoy a high saving rate because of the advantages of transportation
and storage of semi dried products and the decrease of every motion required
